FOOD SAFETY

" Food security exists when all people, at all times, have access to sufficient, safe and nutritious food to meet their dietary needs and food preferences for an active and healthy life". Food and Agriculture Organization (FAO):

Food safety has to meet these requirements:

  1. Supply and availability of appropriate food.
  2. Supply stability with no fluctuations or shortage regardless of the seasons.
  3. Access to food or capacity for purchase.
  4. Good quality and innocuous food.

The European Union and other Western countries meet the three first requirements, with some eventual exceptions. The requirement of innocuous food is more relevant and is the target of all health policies.

Thus in Europe and all developed countries the word food safety refers only to health and innocuousness of food issues.

As a conclusion, government policies, controls and procedures intend to safeguard the safety of any food that arrives to the consumer, avoiding all kind of pollution threatening public health.
